AVO BEAUTY SANDWICH

Hi Loves!

So I haven't shared with you yet about how much I love Kimberly Snyder's book, "The Beauty Detox Solution," but more of that is coming soon. But what I will share with you today is one of her recipes I just made for dinner AND then for lunch the next day because it was yummy and quick! She calls it the Open-Faced Avo Beauty Sandwich. INGREDIENTS 

2 Slices Gluten Free Bread
1 Avocado
1 Tomato
Sprouts
Cayenne Pepper
Sea or Himalayan Salt


Toast your bread


Cut avocado and put on bread followed by tomatoes



 Top with sprouts and sprinkle on a little cayenne pepper and salt

COUSCOUS PREPPIN'

So one way to ensure you're going to eat healthy the next day at work is by prepping the night or weekend before. I know in the morning I'm always rushing and being able to quickly grab my lunch is a time saver! Below is a simple and quick dish that will keep you on track & on time! =)

INGREDIENTS

Couscous- I had Israeli Couscous in the house but any will work
Himalayan or Sea Salt
Paprika
Shallots
Garlic Infused Oil or Olive Oil
Garlic
Scallions
Carrots
Shitake Mushrooms
Cucumbers

Start by preparing your seasonings- you can use anything you like, this was just what I felt like having (not too much salt though, we are trying to be clean!)
Cook Couscous according to package directions; add in seasoning
Chop up your veggies! I also used shitake mushrooms (not pictured)
A few minutes into cooking your Couscous put in the shitake mushrooms and carrots first (cook about 7 min or according to taste), followed by the scallions (another 1-2 min)
 Then I transferred into my lunch bowl for tomorrow and topped with my cucumbers (which I didn't cook because I like them crunchy and raw)

A Little Bit About Us-

Vee and Tee are 2 friends who live in NYC and work in Buying for top Retailers. In the past year both have started their journey to be their best, healthy selves.

As a teen, Tee was always extremely athletic with a lean built. She found that she began struggling to maintain her athletic built when she entered college in 2006. Tiffany lost the time she use to spend working out and playing sports, to school work and living the “typical” college life… partying and drinking. Since graduating college in 2010, she found it most difficult to gain the motivation to drop the 45 pounds she had put on during her college days. However in March of 2013, she became engaged to the love of her life! And after their engagement party in May she realized after looking at the photos from that day, it was now time to change her lifestyle and get her fit life back. 
Her sister introduced her to a weight loss program called Advocare, which many athletes use for performance and weight management purposes. With the help of Advocare, a strict clean diet, exercising 4-5x a week, and support from her family and friends, she has lost a total of 35 pounds and dropped 4 sizes since July 1, 2013. Her wedding is set for July 26, 2014 and has goaled herself to be in the best shape of her life by her wedding date!

Vee has always tried to maintain her weight but yo-yo'ed up and down 5-10 lbs. She would always be counting calories and "dieting" for a few days followed by cheat days; exercise was never constant either. 
Now Vee goes to the gym 4-5x a week- exercises include Boot Camp, Cardio Kick-Boxing, UXF Burn, & Shred classes. She also trains using weights and does occasional hot vinyasa. 
She tries to eat clean and mostly vegetarian and is learning how to identify hunger and satisfy it with organic, nutrient foods.

...And of course both girls are obviously extremely fashionable =)
